  • ¼ cup (56g) unsalted butter, melted and slightly cooled
  • ⅓ cup (65g) granulated sugar
  • ¼ cup (50g) packed light brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 23 tablespoons (30-45ml) milk
  • ½ cup (100g) granulated sugar (for coating)
  • 2 tablespoons ground cinnamon (for coating)
  • 3 tablespoons (42g) unsalted butter, melted (for brushing)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, pumpkin pie spice, and salt.
  3. In a separate bowl, mix pumpkin puree, melted butter, granulated sugar, brown sugar, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir until just combined. Add 2 tablespoons of milk; if dough is too dry, add a third tablespoon. Dough should be soft and slightly sticky.
  5. Turn dough onto a lightly floured surface and pat into a ½-inch thick rectangle (about 8×6 inches).
  6. Cut dough into 12 strips, each about 1 inch wide and 6 inches long.
  7. Gently twist each strip a few times and place on prepared baking sheet, spacing about 1 inch apart.
  8. In a small bowl, mix ½ cup granulated sugar and 2 tablespoons cinnamon for coating. Brush each twist generously with melted butter, then sprinkle cinnamon sugar mixture on both sides.
  9. Bake for 14-16 minutes, until golden brown and edges are slightly darker.
  10. Let cool on baking sheet for 5 minutes, then transfer to a cooling rack. Serve warm or at room temperature.
