This classic apple crisp features tender, cinnamon-spiced apples under a thick, buttery oat crumble topping. It’s quick, easy, and perfect for fall gatherings.

  • 6 medium apples (about 2 ½ pounds), peeled, cored, and sliced into ¼-inch thick pieces (mix of Granny Smith and Honeycrisp)
  • ¼ cup (50g) granulated sugar
  • 2 tablespoons (25g) light brown sugar, packed
  • 2 tablespoons (16g) all-purpose flour
  • 1 ½ teaspoons ground cinnamon
  • 1 tablespoon (15ml) lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup (90g) old-fashioned rolled oats
  • ¾ cup (95g) all-purpose flour
  • ½ cup (100g) light brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (1 stick, 113g) unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Position a rack in the center of the oven. Grease an 8×8-inch baking dish with butter or non-stick spray.
  2. Peel, core, and slice the apples into ¼-inch thick pieces. Try to keep them roughly the same size for even cooking.
  3. In a large bowl, toss the sliced apples with granulated sugar, brown sugar, flour, cinnamon, lemon juice, and vanilla extract until every slice is coated. Let sit for 5 minutes.
  4. In a separate medium bowl, whisk together the rolled oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Pour the melted butter over the dry ingredients and stir with a fork until moistened and clumpy. Do not overmix.
  5. Spread the apples into an even layer in the prepared baking dish. Sprinkle the oat topping evenly over the apples. Do not press it down.
  6. Place the dish on a baking sheet to catch any bubbly juices. Bake for 40-45 minutes, or until the topping is deep golden brown and the apple filling is bubbling around the edges. If the topping browns too quickly, tent loosely with foil after 30 minutes.
  7. Let the crisp cool on a wire rack for at least 15-20 minutes before serving to allow the filling to set.
  8. Serve warm, topped with vanilla ice cream or a drizzle of heavy cream.

Notes

For best results, use old-fashioned oats, not quick oats. Let the apples sit after tossing with sugar and flour to draw out juices. Do not skip the cooling time to prevent a watery filling. For a gluten-free option, use a 1:1 gluten-free flour blend. For a vegan version, use melted coconut oil or vegan butter.
