Easy One-Bowl Pumpkin Banana Bread Recipe

This easy one-bowl pumpkin banana bread is incredibly moist, tender, and full of warm fall flavors. Made with simple pantry ingredients, it comes together in one bowl with no mixer required.

  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1½ teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted and slightly cooled
  • ¾ cup packed brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 cup mashed banana (about 23 very ripe bananas)
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips, chopped walnuts, or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper, leaving an overhang on the long sides. Lightly grease the exposed ends with butter or non-stick spray.
  2. In a large mixing bowl, combine melted butter, brown sugar, and granulated sugar. Stir until well combined and looks like wet sand.
  3. Add eggs one at a time, stirring after each addition until incorporated.
  4. Add pumpkin puree, mashed banana, and vanilla extract. Stir until combined. The mixture will be slightly lumpy from the banana.
  5. Sprinkle flour, baking soda, pumpkin pie spice, cinnamon, and salt over the wet mixture. Stir gently with a folding motion until just combined. Do not overmix.
  6. If using, fold in chocolate chips or nuts with a few gentle stirs.
  7. Pour batter into prepared loaf pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  8. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil around 40 minutes.
  9. Cool in pan on a wire rack for 15 minutes, then lift out using parchment overhang and transfer to rack to cool completely (at least 2 hours) before slicing.

Notes

Don’t overmix the batter to avoid tough bread. Room temperature ingredients create a better emulsion. For cleanest slices, let bread cool completely. Day-old slices are even better when toasted. Freezes well for up to 3 months.
